Acclaimed local gastro pub Dylans is mixing up Negroni cocktails all this week in support of Slow Food’s mission to foster a more sustainable and equitable world of food and drink.
Head of bars and award-winning bartender Roberto Fiorillo has created a menu of Negronis all priced at £12 to suit all tastes, including Dylans’ legendary George Street Negroni.
Weeks in the making, Roberto has been infusing ingredients to create variations on the classic Campari cocktail, which famously originated at Caffe Casoni in Florence, Italy, in 1919. Legend says that Count Camillo Negroni asked his friend, bartender Forsco Scarselli, to strengthen his favourite Campari-based cocktail – the Americano – by replacing the soda water with gin.

Strawberry & Basil infused Gin – Campari – Punt E Mes
Coconut & Lemongrass Negroni
Coconut Washed Gin – Campari – Rhubarb infused Regal Rose Wild Gin – Vermouth
